Every November, the state of Georgia celebrates its official state nut – the pecan. Georgia is the leading producer of pecans in the United States, accounting for nearly 50% of the country’s total production. Pecan Month is a time to celebrate everything pecan, from pies and pralines to ice cream and cookies. Here are some recipes to help you celebrate Georgia Pecan Month!

3 Recipes That Feature Pecans

1. Pecan Pie – A Holiday Staple

Pecan pie is a delicious, classic dessert that is perfect for any occasion. While it may seem daunting, pecan pie is relatively easy to whip up—and we’ll show you how! With our step-by-step guide and mouth-watering recipe, you’ll be able to impress your guests with a homemade pecan pie that tastes as if it came from a professional bakery. Let’s get started.

 

Ingredients:

3 tablespoons of all-purpose flour

3 tablespoons of softened butter,

1 teaspoon salt

3 tablespoons of sugar

2 large egg yolks, well-beaten

1/3 cup of bitter corn syrup

A half-cup of light corn syrup

1 teaspoon of vanilla extract

2 cups of chopped, whole, pecans

1 pie crust, 9-inch, unbaked

 

Directions:

1) Preheat the oven to 375 degrees F (190 degrees C).

2) In a small bowl, combine flour and salt; set aside.

3) Cream butter or margarine and sugar together until fluffy in a large bowl. Add egg yolks and beat well.

4) Stir in corn syrups and vanilla extract. Gradually add flour mixture, constantly stirring until well blended. Stir in nuts. Pour mixture into pie shell.

5) Bake at 375 degrees F (190 degrees C) for 50 minutes. Shield the edges of the crust with strips of aluminum foil after 25 minutes to prevent over-browning. Cool on a wire rack before serving.

2. Pecan Salad – A Delicious, Nutty Treat!

A pecan salad is a dish made with pecans, lettuce, and other ingredients. The nuts add a delicious, nutty flavor to the salad.

 

Ingredients:

1/2 cup chopped pecans

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup crumbled blue cheese

1/4 cup raisins

1/4 cup dried cranberries

1 tablespoon white wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon olive oil

Salt and pepper to taste

Iceberg lettuce leaves (optional)

 

Directions: 

  1. In a large bowl, combine the chopped pecans, diced celery, diced red onion, crumbled blue cheese, raisins, dried cranberries, white wine vinegar, Dijon mustard, honey, and olive oil. Season with salt and pepper to taste.
  2. Mix well.
  3. Cover and refrigerate for at least 1 hour before serving.
  4. Serve on iceberg lettuce leaves (optional).

3. Pecan Cookies

These pecan cookies are the perfect treat for a chilly fall day! They are packed with flavor, and they’re so easy to make. Plus, they freeze well, so you can make a big batch and enjoy them all season long.

 

Ingredients:

1 cup (2 sticks) of unsalted butter at room temperature

1 cup sugar

2 big eggs

1 teaspoon vanilla extract

2 cups of general-purpose flour

1 tablespoon of baking powder

A half-teaspoon of baking soda

A half-teaspoon of salt

2 cups of chopped pecans

 

Directions:

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Cream the butter and sugar in a big bowl until it’s light and creamy. After incorporating each egg one at a time, whisk in the vanilla. Mix the salt, baking soda, baking powder, and flour in a separate bowl. Mix just till mixed after gradually incorporating the dry ingredients into the wet ones. Add the pecans and stir.
  3. Drop dough by rounded tablespoons onto the prepared baking sheet. Bake until golden brown, about 15 minutes. Let cool on the baking sheet for 5 minutes; then transfer to a wire rack to cool completely.
  4. Store in an airtight container at room temperature for up to 1 week.
